Stir-fried Shrimp , snow peas and red bell pepper with tamarind sauce or " ผัดกุ้งใส่น้ำมะขาม phad Gung Sai Num Makahm" in Thai. I cooked dinner with tamarind paste again last night. I stir-fried shrimp with it. I had once at Connecticut last year. Tonight I am going to try to make it. This simple to prepare, I added fresh chilies to make the dish spicy.
Ingredients:
1) 15 shrimps
2) 2" Length tamarind paste
3) 2 Tbsp thin soy sauce
4) 1/2 Tbsp palm sugar
5) 1 red bell pepper
6) 1 cup snow peas
7) 4 cloves garlic
8) 3 shallots
9) 2 Tbsp canola oil
Preparation:
1) Clean and peel shell.
2) Wash red bell pepper and snow peas, cut the end both side of snow peas and cut red bell pepper into 2 " length.
3) Soak tamarind paste in water 1/4 cup for 20-30 minutes.
4) When the tamarind paste is soft, squeeze the soaked tamarind well to release all the pulp from it. Strain to get thick tamarind juice and discard the pith and seeds.
5) I have 3 Tbsp tamarind extract.
6) Add think soy sauce and palm sugar to mix with tamarind extract.
7) Peel garlic and remove chilie stems pound garlic and chilies in a mortar.
8) Peel shallots and wash dirt, thinly slice.
9) Heat canola oil in a pan on medium heat.
10) When the oil is hot, add pound garlic and chilies.
11) Add sliced shallots.
12) Stir fried until fragrant then add shrimps.
13) Pour the mixture to stir in the pan with shrimps until shrimps are cooked.
14) Add snow peas.
15) Add cut red bell pepper.
16) Stir quickly for a minute and remove from the heat. Enjoy.

Thai Spicy Tuna Dip with Veggies
Thai Spicy Tuna Dip with Veggies or " น้ำพริกปลาทูน่า Num Prik Pla Tuna" in Thai. Num Prik is a spicy chili paste served with rice or sticky rice. There is variety ways to make it. The main ingredients are some type of fish or meat , garlic, fresh chilies, fish sauce and lime juice. We like to have with vegetables, and serve it as main dish. Here I am going to make Num Prik Pla Tuna for our dinner. I boiled garlic, shallots and fresh chilies for my Num Prik Pla Tuna tonight. You could grill garlic, shallots and fresh chilies or you can put in a pot and dry fry until fragrant and soften. This is the way I want to try it. I will try to make it again with grill garlic, shallots and fresh chilies then I will find out which way I like to make Num Prik Pla.
Ingredients:
1) 1 steak tuna
2) 5 Shallots
3) 4 garlics
4) 5 fresh chilies
6) 2 Tbsp lime juice
7) 2 Tbsp fish sauce ( 1 Tbsp for the soup, 1 Tbsp for Num PRik Pla in the mortar)
8) 2 cup for boil the tuna, shallots, garlic and chilies
9) 1/2 cup soup from boil tuna
9) 2 green onions
11) 4 sprigs cilantro
12) vegetable to eat with tuna dip ( cucumber, cabbage, napa or long green beans)
13) 1/8 tsp salt
Preparation:
1) Wash tuna steak.
2) Wash all vegetables that you would like to serve with Num Prik Pla Tuna.
3) Wash green onions and cilantro.
4) Chop green onions and cilantro.
6) Peel Peel garlic, shallots, remove chili stems, wash dirt.
7) Pour 2 cups of water water to boil , add garlic, shallots and fresh chilies. Add 1/8 tsp salt.
8) When the water is boiling, add tuna steak into the pot for 15-20 minutes or until tuna is done. and add some fish sauce into the pot.
9) When the tuna is cooked. Remove from the heat.
10) Well pound garlic, shallots and chilies in a mortar.
11) Place the tuna into the mortar and pound until well blend with garlic, shallots and chilies.
12) Add 1/2 cup soup from the pot, 1 Tbsp fish sauce and 2 Tbsp lime juice.
13) Use pestle pound slowly until all ingredients get mix.
14) Add cut green onions and cilantro.
15) Mix together and taste for your own favor.
16) Put Num Prik Pla Tuna in a bowl and serve with fresh vegetables.
Steamed Tilapia with Tamarind Sauce
Steamed Tilapia with Tamarind Sauce or "Pla Rad Na Num Ma Kharm" in Thai. I am not sure what is this dish in Thai. If we fried fish and make tamarind sauce over the fried fish called Pla Rad Prik but here I steamed Talapia and make the sauce from tamarind paste, sriracha chil sauce, thin soy sauce and palm sugar, cut some red bell pepper. If you don't like red bell pepper you don't have to put in the dish is fine too. I like to have some crunchy vegetable on my dish. This is very easy to make and taste very delicious.
Ingredients:
1) 1/2 Lb. Tilapia
2) 3 shallots

5) 3 sprigs cilantro
6) 1/8 Tsp salt
7) 1 red bell pepper
