Shrimp Panang Curry
Shrimp Panang Curry or "Panang Gung" in Thai. I made Panang Gung today. Panang is very popular favorite at many Thai restaurants. It's typically made with beef( Nua), but either chicken, pork or shrimp can be substituted. Here I made with shrimp. Panang ( Penang) Curry takes it name from the city of Malaysia. This type of curry is richer, sweeter and creamier than more herbal Thai red or green curries, making it very popular with foreigners. Ground peanuts is unique ingredient in this dish. The other Thai curry that put ground peanut is Masaman Curry. I will cook later. Usually, we don't put vegetable in Panang in Thailand but I put red pepper here. It is delicious . The Panang curry paste in this recipe is made up of shallots, galangal, lemon grass, kaffir lime peel, white pepper, cilantro root and shrimp paste.
Ingredients.
1) 15 Shrimps
2) 1 cup coconut milk
3) 1/2 Tbsp palm sugar
4) 1 1/2 Tbsp fish sauce
5) 1 cup Thai basil
6) 1/4 cup ground peanut
7) 3 kaffir lime leaves
8) 1 red bell pepper
9) 2 Tbsp Panang curry
Preparation
1) Wash and peel shrimps
2) Pick only Thai sweet basil leaves from stems
3) Cut red bell pepper into 2 " length
4) Cut half of kaffir lime leaves
5) Ground peanut by using mortar and pestle
7) Heat 1/2 cup of coconut milk over medium heat until the oil surfaces
8)Add panang curry paste
9) stir constantly for 2 minutes until fragrant and red oil surfaces
10) Add shrimps into the pot
11) And cook for 1 minute
12) Add 1/2 cup of the remaining coconut milk and season to taste with fish sauce and palm sugar, stir well.
13) Add red bell pepper into the pot for 30 secounds
14) Add Thai basil and kaffir lime leaves
15) Add ground peanut
16) Stir quickly to heat sweet basil, kaffir lime leave and red pepper so they retain their colour, then remove from heat.enjoy!
I need to learn how to make this from scratch!!!!!!!! I've only had it at restaurants thus far.... thanks for the recipe! Where do you buy kaffir lime leaves though? International supermarkets?

I can pick it up anytime I want. It is so nice. If you live near by I would love to share with you and we can cook together. Good luck
