Stalks of Chinese broccoli with shrimp salad; ยำคะน้ากุ้งสด.
Ingredients:
1) 20 shrimp
2) 1/2 Tbsp sugar
3) 3 Tbsp lime juice
4) 3 Tbsp fish sauce
5) 1 tomato
6) 2 shallots
7) 4 Thai fresh chilies
8) 3 cloves garlic
9) 2 green onions
10) 3 sprigs cilantro
11) 9 stalks of Chinese broccoli
12) 5 small carrots
Preparation:
1) Clean shrimp, peel shells, and devein.
2) Cut the leaves from the stalks.
3) Peel stalks skin of Chinese broccoli and peel carrots.
4) Then slice into small pieces
5) Peel garlic, remove chilies' stem, wash dirt, mince garlic, slice shallots and cut chilies into small pieces.
6) Remove tomato stem, green onion roots, wash dirt, and pat dry. Finely slice onion, coarsely chop green onion and cilantro, then cut tomato in quarter.
7) Mix lime juice, fish sauce, sugar, minced garlic, and hot chillies in a mixing until. Stir well until sugar dissolved and taste for your own flavour.
8) Pour 3 cups water in a pot, bring to boil on high heat, add sliced Chinese broccoli, scald about 2 minutes, drain and set aside.
9) After that cook shrimp in the pot.
10) Place cooked shrimp into a mixing bowl. Stir little bit.
11) Add cooked stalks of Chinese broccoli.
12) Add cut green onion, shallots, tomato and cilantro.
13) Stir thoroughly until all ingredinets get into the dressing.
14) Spoon the salad on a plate, and serve immediately.

Stir-fried shrimp with holy basil on rice and fried egg
Stir-fried shrimp with holy basil on rice and fried egg : ข้าวกระเพรากุ้งสับไข่ดาว This is a simply stir fry with fresh Holy Basil "Bai ka-prow" with oyster sauce, minced Thai chilies, fish sauce and serve with fried egg on top or put aside. This holy basil should not be confused with Thai basil or Horapa which has an anise-like taste. Thai holy basil is unique to the stir fried recipe and is only used sparingly in other Thai dishes normally as a deep fried garnish on top of varied stir fries. Thai holy basil is hard to find where I live. I plant them on the pot and I can use them all summer.
Ingredients:
1) 25 Medium Shrimp
2) 1 cup Thai basil
3) 5 cloves garlic
4) 3 fresh chillies
5) 1/2 Tbsp sugar
6) 2 Tbsp thin soy sauce
7) 1/8 tsp white pepper powder
8) 2 Tbsp canola oil
9) 2 Tbsp oyster sauce
10) 3 Tbsp water
11) 1/2 bell pepper.
Preparation:
1) Peel shrimp.
2) Bring clean shrimp to grind.
3) This is my basil plants. They are looking good.
4) And pick only sweet basil leaves from stems.
5) Remove chillies stems and peel garlic then mince garlic and chillies.
6) Deep fried egg.
7) Heat the canola oil in a pan over medium heat.
8) Add garlic and chillies to stir in the pan. Stir evenly until fragrant about 1-2 minutes.
9) Add ground shrimp until cooked through.
10) Pour some water to help soften or if the pan is too much dried.
10) Seasoning with oyster sauce, while pepper powder, sugar and thin soy sauce . Stir fry constantly.
11) Add some bell pepper.
12) Add basil and stir well.
13) Remove from the heat and serve with fried egg and steamed Jasmine rice.

Shrimp Massaman Curry with avocado
Shrimp Massaman Curry with avocado or Kaeng Massaman Gung; แกงมัสมั่นกุ้ง. I had Thai dinner with a friend of us in Bangkok Garden, Bethesda, MD. WE order Massaman Curry Shrimp and it came out with avocado. It took me for two years to try to make this recipe me in my kitchen. My husband loves avocado but he is not crazy to put on Thai curry but I really like it.
Ingredients:
1) 15 Shrimps
2) 4 avocados
3) 2 Tbsp roasted peanut
4) 6 Green cardamom pods.
5) 3 shallots
6) 1 " Length roasted cinnamon stick
7) 2 1/2 Tbsp Tamarind juice.
8) 2 Tbsp fish sauce
9) 2 cup Coconut milk
10) 1/2 Tbsp palm sugar
11) 3 Bay leaves
12) 3 Tbsp Massaman curry paste
13) 1/2 Tbsp canola oil
Preparation:
1) Clean and peel shell of shrimp.
2) This is roasted peanut, palm sugar, fish sauce and massaman curry paste.
3) The picture of avocado is only three avocados but I actually use four avocados on this recipe.
4) Cut avocados in half. Remove the seed.
5) Cut into 4 pieces.
6) There are roasted peanuts, cardamom seeds, bay leaves, shallots and cinnamon stick.
7) Tamarind juice.
8) In a pot, heat canola oil in medium heat, when the oil is hot, add massaman curry paste. Stir for a minute.
9) Add coconut milk then Stir until a film of the oil on surfaces. Add roasted peanuts, cardamom seeds, bay leaves, shallots and cinnamon stick in to the pot.
10) Add shrimps continue cooking for 2-3 minutes until the shrimp is cooked through.
11) Add cut avocados.
12) Add palm sugar and fish sauce. Turn off the heat

Baked shrimp with grass noodle
Baked shrimp with grass noodle; Gung Op Wun Sen ้กุ้งอบวุ้นเส้น in Thai. This recipe is very easy to cook shrimp with glass noodle. I baked the whole shrimp without removing the shell on this recipe but if you prefer you can peel shrimp. This recipe you can cook on the oven or the stove. I prefer to cook on my stove this time. It turn out good and delicious.
3) 15 cloves fresh garlic
4) 2 " length ginger and thinly sliced
5) 1 tsp ground white pepper
6) 2 Tbsp thin soy sauce
7) 1 tsp dark soy sauce
8) 2 Tbsp oyster sauce
9) 1Tbsp sugar
2) Clean shrimp. Hold the shrimp in the middle section then removing the unwanted parts.
3) Removing the veins: The vein looks like a dark string in the back of the shrimp.
4)You can use a veining tool to take the vein out.
5) Rinsing the shrimp again and this is the shrimp I want to cook with this recipe
6) When the glass noodle is soft, drain and set a side.
7) Peel garlic, wash dirt from cilantro and green onions.
8) Grind while pepper.
9) In a mixing bowl, add thin soy sauce, sesame oil, dark soy sauce, oyster sauce, water and sugar.
10) Stir until sugar dissolved.
11) Add drained glass noodles, let noodles absorb sauces about 5 minutes.
12) crush garlic, cilantro roots.
13) Slice ginger.
14) In a pot, turn the heat in a medium to high. Add a tiny bit of sesame oil on the bottom.
15) Place sliced ginger, crushed garlic and cilantro roots.
16) Add shrimp.
17) Add sauce mixture with noodles.
18) Cover and cook in the stove for approximately 20-25 minutes or until cooked.
19) The shrimp should have turned a nice pink or orange colour.
20) Cut green onions and cilantro in 1 " lengh.
21) Top with green onions and cilantro.
22) Then cover and cook an additional 2 minutes.
