Thai Spicy Squid with Toasted Rice

Thai Spicy Squid with Toasted Rice or Larb Pla Meuk ลาบปลาหมึก in Thai. This is spicy squid salad with toasted rice. I adapt from my Thai spicy ground tilapia with toasted rice http://amporn-oleski.blogspot.com/2010/02/thai-spicy-ground-fish-with-toasted.html.

Ingredients:
1) 1 Lb. squid
2) 3 green onions
3) 5 sprigs cilantro
4) 1 thinly sliced red onion or shallot
5) 1/8 Ice lettuce
6) 1/2 carrot
7) 2 Tbsp fish sauce
8) 3 Tbsp lime juice
9) 1 Tbsp toasted rice powder
10) 1/2 tsp ground dried chili pepper
11) 1 tsp sugar

Preparation:
1) prepare the ground dried chili pepper. Those photos show you big amount because I made for the future. It's easy to find and you can buy anywhere in the market. Put dried chili pepper on the pan with medium heat.


2) Stir constantly to avoid burning until dried chili pepper turn to dark red.

3) Here I used mortar and pestle to grind the dried chili pepper. You can use the electric grinder for more convenient.

4) Place to a jar and set aside ground dried chili pepper for the dish.

5) Bring 1/2 cup uncooked rice to toast. I need only 1 Tbsp for the dish but I make more for next time I need it.

6)Stir constantly to avoid burning until rice turn to dark colour.

7)Bring toasted rice to grind , you can use the grinder to save sometime and more convenient or the mortar and pestle to grind it.

8) This is the result toasted rice powder, put in a jar and set aside.
9) Wash ice lettuce and peel red onion and carrot.
10) Cut ice lettuce into a bite size, thinly slice red onion and shred carrot.
11) Wash green onions and cilantro then thinly slice them.

12) Clean and score the squid.

13) Boil 2 cups of water on high heat for cook squid.
14) When the water is boiling, put cut squid into the pot to boil until cooks. Be careful not over cook squid it becoming rubber.
15) Drain it.
16) Place cook squid to the mixing bowl.
17) Add ground dried chili pepper, toasted rice powder, fish sauce, sugar and lime juice.
18) Add all vegetables into a mixing bowl.
19) Mix well until all ingredients get together.
20) Place in serving plate and enjoy your Thai spicy squid with toasted rice.

Steamed Squid with Lime Sauce

Steamed Squid with Lime Sauce or " Pla Meuk Neung Ma-Nao " ปลาหมึกนึ่งมะนาว in Thai. I got squid from Asian market last week and I steamed squid with lime sauce. It's really hot and tasty.

Ingredients:
1) 1 Lb squid
2) 2 cloves garlic
3) 4 fresh chilies
4) 2 springs cilantro
5) 1 and 1/2 fish sauce
6) 2 Tbsp lime sauce
7) 1/2 Tbsp sugar

Preparation:
1) Wash the squid well after removing the inedible portions.
2) Score the squids.



3) Sprinkle with salt.
4) Pour water to the steamer on high heat, when the water is boiling, bring to squids to steam for 5 - 15 minutes.



5) While steaming the squid, let's make a spicy sauce.
6) Cut the fresh chilies, cilantro roots and garlic into small pieces.
7) Put them into a blender.

8) Well blend all vegetables and place into the small mixing bowl.
9) Add sugar, fish sauce and lime juice.
10) Stir well until the sugar dissolves.
11) When the quid is cooked, remove from the steamer and cut into a bite size pieces then arrange the squid on the plat.
12) pour the spicy sauce over the steamed squid and garnish with cilantro and enjoy it.

Stir-Fried Squid with Salted Duck Eggs

Stir-Fried Squid with Salted Duck Eggs or ( Pla meuk phat khai khem: ปลาหมึกผัดไข่เค็ม ) I see the photo of this recipe somewhere in the Internet. It looks so yummy I want to try to make it here. I don't have Chinese celery. Here I used three egg yolks. It seems too much for the dish to me. You can find salted duck egg in Asian market. I turn down the saltiness by add more sugar and some lime juice.

Ingredients:
1) 0.8 Lb squid
2) 1 clove garlic
3) 4 fresh chilies
4) 3 salted duck eggs
5) 5 green onions
6) 1 red bell pepper
7) 2 Tbsp thin soy sauce
8) 1 tsp lime juice
9) 1/2 Tbsp sugar
10) 2 Tbsp canola oil

Preparation:
1) Clean squid and cut into small bite.
2) Bring the water to boil to cook the squids.
3) Drain and set aside.
4) Peel garlic and remove the stems from fresh chilies.
5) Use the mortar and pestle to grind the garlic and fresh chilies.
6) This is salted duck eggs, you can find in Asian market.

7) Cut the salted duck eggs with its shell into halves and spoon out it content then cut into quarters and set aside.
8) Wash green onions and cut into 1.5 " strips.
9) Wash red ell pepper and cut into thin julienne.
10) Heat canola oil in a pan on medium heat.
11) Add ground fresh chilies and garlic into the pan. Stir-fried until fragrant.
12) Add cooked squid.
13) Add thin soy sauce, sugar and lime juice.
14) Add the white portions of green onion to stir-fried until get soft.
15) Add cut red bell pepper.
16) Add cut green onions.
17) Add salted duck eggs.
18) Stir-fried until egg yolks dissolves and remove from the heat. Enjoy it!
