Steamed whole Tilapai with Soy Bean Paste; ปลานิลนึ่งเต้าเจี้ยว. I wanted to buy whole fish to grill with lemongrass but they cut my fish in half. I steamed with soy beans paste instead of grill. It was good and delicious too.
Ingredients:
1) 2.39 Lbs whole tilapia
2) 2 small roots ginger
3) 2 Tbsp salted soy bean
4) 1 tsp thin soy sauce
5) 1 Tbsp sugar
6) 4-5 Tbsp water
7) 12 fresh chilies
8) 5 sprigs cilantro
9) 15 cloves garlic
10) 4 green onion
Preparation:
1) Scraped and clean the fish very well.
2) I use salt to get rid of the smell from the fish.
3 ) Score the fish at an angle all the way to the bones on both sides to help it cook faster and the sauce get through the fish better.
4) Heat water in a steamer until boiling. Then put the prepared fish in the steamer and leave it for 20-30 minutes or until the fish is cooked.
5) On the mean time while we are steaming the fish. Peel garlic, ginger and pick up the stems of fresh chilies.
6) Slice ginger and chilies. Chop garlic.
7) Here is soy bean paste.
8) Mix all ingredients; soy bean paste, thin soy sauce, sugar and water in a mixing bowl and stir well.
9) When the fish is cooked. Dumping out the water in the dish carefully.
10) Pour the mixing sauce all over the fishes.
11) Place chopped garlic all over the fishes.
12) Following the sliced ginger.
13) And top on the plate with sliced fresh chilies.
14) Steam for 3-5 minutes.
15) Wash cilantro, and green onions. Cut into 1 " length.
16) Sprinkle on top of the fishes.
17) Steam for one minute.
18) Transfer the steamed fishes to a serving dish. Enjoy!

Salt-Crusted Tilapia with Lemongrass, Kaffir lime leave, Galangal and Pineapple
This is salt-crusted tilapia, cooked on our new grill.
Ingredients for the hot sauce:
1) 3 cloves garlic2) 3 Tbsp fish sauce
3) 10 Thai hot chili
4) 1 Tbsp palm sugar
5) 3 Tbsp lime juice
Ingredients for the grill tilapai
1) 2 whole tilpapia
2) 1/2 cup salt
3) 2 " length galangal
4) 5 kaffir lime leaves
5) 1/4 cup dice pineapple
Preparation:
1) Start with fresh cleaned tilapia, gutted, but preferably not skinned or scaled, and pieces of lemon grass, galangal root, pineapple, kaffir lime leaves and a small amount of natural salt.
2) This is the natural salt we used. You can use coarse sea salt as well.
3) Lay out the fish.
4) First place the pineapple inside for sweetness and moisture for the steaming.
5) Fill in the rest with the lemon grass and kaffir lime leaves.
6) Rub the salt onto the surface of the fish on both sides.
7) Lay out the fish to prepare to grill, and preheat the grill to about 350 degrees or more.
8) We laid the fish on hickory planks, to get a wood-fired flavor to the fish.
9) Close the grill and let it cook for about 20 minutes to get all the pineapple hot and steaming inside.
10) Boil water and cook the vermicelli noodles for 10 to 15 minutes. This will be served on the side with the fish.
11) Set out your ingredients for the hot sauce, garlic, lime and Thai chili peppers.
12) Grind the garlic and chili peppers together.
13) Grind into a even paste.
14) Add some fish sauce and palm sugar and lime juice.
15) Grind this into a sauce.
16) The fish looks great.
17) Turn the fish over to cook for another 10 minutes on the other side. Be careful when you do this, or get someone you don't care about to risk themselves to do it.
18) The hickory planks are burned a little, but the fish looks perfect.
19) Lay down a bed of greens to make a presentation.
20) Lay out the fish.
21) Put the hot sauce in the bowl, with the cooked noodles, garnish with piles of cilantro and enjoy your tasty grilled fish!

Thai style fish rice porridge or Joke Pla
Thai style crab rice porridge or Joke Pla; โจ๊กปลา in Thai.
This recipe for two bowls of Joke Poo
Ingredients for the rice:
1) 2 cups cooked jasmine rice.Ingredients for the rice:
2) 4 cups water
3) 1/8 tsp salt
4) 2 Tbsp thin soy sauce
Ingredients for the soup :
1) 2 " length ginger
2) 5 cups ginger juice
3) 1/4 tsp salt
4) 0.59 Lb of haddock fish
5) 1/8 white pepper
Ingredients for the garnish :
1) ground white pepper powder
2) thin soy sauce
3) finely slivered fresh ginger
4) finely sliced green onions
5) fried garlic
Preparation:
1) Boil cooked jasmine rice with water. Keep stirring constantly until the rice is very soft and breaks apart. I used whisk to broke apart of the rice for save sometime or you can use food processor.
2) When the rice breaks a part, set a side. Wash dirt from green onions.
3) Prepare the broth using a fresh ginger. Peel ginger and cut into small pieces. Bring into a a blender.
4) Strained to get 1/2 cup ginger juice, pour 5 cups water to boil, add salt and ground white pepper. When the soup is boiling for two minutes.
5) Wash haddock fish, cut into a small bite.
6) When the soup is boiling for two to three minutes. Bring the fisht to boil until cooked.
7) When the fish is cooked, take it out from the pot gently.
8) Turn off the heat and save the soup for next steps. In another small pot, scoop cooked rice on medium to high heat.
9) Pour 1 and 1/2 cups of broth into a pot,
10) Keep stirring constantly and season with salt and thin soy sauce.
11) Let it boil another two minutes, place the hot Joke into a bowl.
12) Here is the ingredients for garnish.
13) Top the rice porridge with cooked fish, fried garlic, sliced green onions, slivered fresh ginger and sprinkle with Thai pepper powder. Enjoy it. :-)
