Stir-fried shrimp with holy basil on rice and fried egg

 Stir-fried shrimp with holy basil on rice and fried egg : ข้าวกระเพรากุ้งสับไข่ดาว This is a simply stir fry with fresh Holy Basil "Bai ka-prow" with oyster sauce, minced Thai chilies, fish sauce and serve with fried egg on top or put aside. This holy basil should not be confused with Thai basil or Horapa which has an anise-like taste. Thai holy basil is unique to the stir fried recipe and is only used sparingly in other Thai dishes normally as a deep fried garnish on top of varied stir fries. Thai holy basil is hard to find where I live. I plant them on the pot and I can use them all summer.

Ingredients:
1) 25 Medium Shrimp
2) 1 cup Thai basil
3) 5 cloves garlic
4) 3 fresh chillies
5) 1/2 Tbsp sugar
6) 2 Tbsp thin  soy sauce
7) 1/8 tsp white pepper powder
8) 2 Tbsp canola oil
9) 2 Tbsp oyster sauce
10) 3 Tbsp water
11) 1/2 bell pepper.

Preparation:
1) Peel shrimp.
 2) Bring clean shrimp to grind.
 3) This is my basil plants. They are looking good.
 4) And pick only sweet basil leaves from stems.
 5) Remove chillies stems and peel garlic then mince garlic and chillies.
 6) Deep fried egg.
 7) Heat the canola oil in a pan over medium heat.
 8) Add  garlic and chillies to stir in the pan. Stir evenly until fragrant about 1-2 minutes.
 9) Add ground shrimp until cooked through.
 10) Pour some water to help soften or if the pan is too much dried.
 10) Seasoning with oyster sauce, while pepper powder, sugar and thin soy sauce . Stir fry constantly.
 11) Add some bell pepper.
 12) Add basil and stir well.
 13) Remove from the heat and serve with fried egg and steamed Jasmine rice.

Stir-fried spicy spaghetti with shrimp


stir-fried spicy spaghetti with shrimp; drunken spaghetti  or Phad Kee Mao Spaghetti; ผัดขี้เมาเส้นสปาเก็ตตี้. I try to cook the Phad Kee Mao by using spagetti and add some kaffir lime leaves and green peppercorns on the dish. It is simple and delicious. There are many kinds of noodles that can be used in this recipe, for example  Chinese egg noodle, wide or small rice noodle sticks and even vermicelli.

Ingredients:
  1. 15 shrimps
  2.  1 cup of Thai basil
  3.   8 hot Thai chili
  4.  4 cloves garlic
  5.   6 Kaffir lime leaves
  6.  6  sprig of green peppercorns
  7.   1 red pepper
  8.   1/2 Lb. spaghetti
  9. 2 carrots
  10. 2 Tbsp oyster sauce
  11. 1/2 Tbsp sugar
  12. 2 Tbsp thin soy sauce or fish sauce
  13. 2 Tbsp canola oil
Preparation:
1) Bring 8 cups of water to boil. Add 1/2 Lb. of pasta to boiling water. Cook 9 to 11 minutes or until desired tenderness.

 2) Wash red pepper and cut into 1 " length. Peel carrots and cut into small bite. Peel garlic. Pick up the hot Thai chili from stems. Wash kaffir lime leaves. This is green peppercorn is from the jar. You can find at Asian grocery.
 3) Pick up the Thai basil from stems and peel shrimps.
 4) Use a mortar and pestle to crush the chillies and garlic.

 5) When the pasta is cooked, rinse with cold water and drained. 
 6) Put canola oil into pan with medium heat.
 7) When oil is hot put crushed garlic and chillies into the pan.
 8) Add shrimps. And stir well for a minute.
 9) Add thin soy sauce, oyster sauce and sugar. Stir well until shrimps are cooked then add carrots.
 10) Add spaghetti into the pan. Stir very well until spaghetti  get into the sauce.
 11) Add green peppercorns, cut red pepper and kaffir lime leaves. Stir well until cooked through.
 12) Turn off the heat then add Thai basil onto pan.
 13) And stir well until all ingredients get together then remove from the heat.
14) Place Phad Kee Mao spaghetti to a plate and serve immediately. Enjoy :-)

Drunken Fried Rice Shrimp

Drunken Fried Rice Shrimp or Khao Phad Kee Mao Gung : ข้าวผัดขี้เมากุ้ง in Thai. I am not big fan of fried rice recipe but I love to make it whenever I have left over cooked rice and I found its best way to create something in hand become great meal for my family. This is quite spicy fried rice and smell good with Thai basil in the dish. Very easy to make it too. Follow my recipe step by step and you can make it from your own kitchen too. Enjoy.

Ingredients :
1) 3 cups cooked rice
2) 3 cloves garlic
3) 1 head while onion
4) 1 cup Thai basil
5) 2 eggs
6) 5 hot Thai chilies
7) 2 Tbsp oyster sauce
8) 2 Tbsp fish sauce
9) 1/2 Tbsp sugar
10) 3 Tbsp canola oil

Preparation:
1) Here is 3 cups of cooked rice.
2) Clean shrimps and wash all vegetable and herb, pick sweet basil leaves from stem.
3) Use the mortar and pestle to crush the garlic and chillies.

4) Put canola oil into pan with medium heat.
5) When oil is hot add crushed garlic and chilies.
6) Add sliced onions. Keep stir fried until fragrant.
7) Add shrimp. Stir well until shrimp is getting cook.
8) Make room for eggs in the middle, scramble with spatula.
9) After the egg is cooked.
10) Add cooked rice.
11) Season with oyster sauce, fish sauce, and sugar.
12) Stir-fry all ingredients until mix thoroughly.
13) Add sweet basil leaves.
14) Stir quickly, and remove from heat.
15) Put the fried rice on a plate, garnish with fresh sweet basil leaves.

Stir-fried Shrimp with Shredded Bamboo Basil

Stir-fried Shrimp with Shredded Bamboo Basil or " Phad Kra Prow Gung Sai Nor Mai " in Thai.
I made Phad Kra Prow with bamboo shoots for our dinner. It was good too, I had this dish in Houston, Texas. I never thought Phad Kra Prow with bamboo shoots until I went to try Thai restaurant in Texas and I learn to try from them.

Ingredients:
1) 16 Medium Shrimps
2) 1 cup Thai basil
3) 8 cloves garlic
4) 6 fresh chillies
5) 1/2 Tbsp sugar
6) 2 Tbsp lite soy sauce or fish sauce
7) 2 Tbsp Oyster Sauce
8) 1 Tbsp Water
9) 1/2 Tbsp lime juice
10) 2 Tbsp canola oil
12) 1 cup bamboo shredded shoots.

Preparation:
1) Pour water to boil on medium to high heat, when the water is boil add shredded bamboo shoots for 10-15 minutes.
2) Drain and set aside.
3) Clean shrimps and Thai basil then pick only leaves and set aside.
4) Peel garlic and remove fresh chilies stems , wash dirt and pound in the mortar.

5) Heat oil in a pan on medium heat.
6) When the oil is hot, add pounded garlic and fresh chilies.
7) Add shrimps.
8) Add oyster sauce, thin soy sauce, sugar and lime juice.
9) Stir well until shrimps are cooked.
10) Add bamboo. Stir thoroughly until all ingredients get together.
11) Add Thai basil and stir for a 30 seconds.
12) Remove from heat, place into a plate and enjoy meal.
