Salt-Crusted Tilapia with Lemongrass, Kaffir lime leave, Galangal and Pineapple

This is salt-crusted tilapia, cooked on our new grill.
Ingredients for the hot sauce:
1) 3 cloves garlic
2) 3 Tbsp fish sauce
3) 10 Thai hot chili
4) 1 Tbsp palm sugar
5) 3 Tbsp lime juice

Ingredients for the grill tilapai
1) 2 whole tilpapia
2) 1/2 cup salt
3) 2 " length galangal
4) 5 kaffir lime leaves
5) 1/4 cup dice pineapple

Preparation:

1) Start with fresh cleaned tilapia, gutted, but preferably not skinned or scaled, and pieces of lemon grass, galangal root, pineapple, kaffir lime leaves and a small amount of natural salt.
2) This is the natural salt we used. You can use coarse sea salt as well.
3) Lay out the fish.
4) First place the pineapple inside for sweetness and moisture for the steaming.
5) Fill in the rest with the lemon grass and kaffir lime leaves.
6) Rub the salt onto the surface of the fish on both sides.
7) Lay out the fish to prepare to grill, and preheat the grill to about 350 degrees or more.
8) We laid the fish on hickory planks, to get a wood-fired flavor to the fish.
9) Close the grill and let it cook for about 20 minutes to get all the pineapple hot and steaming inside.
10) Boil water and cook the vermicelli noodles for 10 to 15 minutes. This will be served on the side with the fish.
11) Set out your ingredients for the hot sauce, garlic, lime and Thai chili peppers.
12) Grind the garlic and chili peppers together.
13) Grind into a even paste.
14) Add some fish sauce and palm sugar and lime juice.
15) Grind this into a sauce.
16) The fish looks great.
17) Turn the fish over to cook for another 10 minutes on the other side. Be careful when you do this, or get someone you don't care about to risk themselves to do it.
18) The hickory planks are burned a little, but the fish looks perfect.
19) Lay down a bed of greens to make a presentation.
20) Lay out the fish.
21) Put the hot sauce in the bowl, with the cooked noodles, garnish with piles of cilantro and enjoy your tasty grilled fish!

Glass Noodles Phad Thai Shrimp

Glass Noodles Phad Thai Shrimp or Phad Thai Wun Sen Gung; ผัดไทยวุ้นเส้นกุ้ง. I like to make Phad Thai with glass noodles also. I love the texture of it. Every ingredients are the same with my Phad Thai recipe but I use glass noodle. Enjoy my recipe.

Ingredients for Phad Thai Sauce
1) 3 Tbsp tamarind juice
2) 3 Tbsp fish sauce
3) 1 Tbsp palm sugar

Ingredients:
1) 2 coils glass noodle
2) 15 medium shrimp
3) 2 eggs
4) 1/2 cup ground roast peanut
5) 3 Tbsp canola oil
6) 2 shallots
7) 3 cloves garlic
8) 1 and 1/2 cups bean sprout
9) 4 green onion
10) 1/2 package of fried tofu.


Preparation:
1) Soak glass noodle for 15-20 minutes or until noodle is getting soft.
2) Here is the wet tamarind seedless.
3) I Soak 1/2 cup of water with warm water for 5-10 minutes or until soft.
4) Peel and clean shrimp.
5) Strain and discard fibers.
6) Here is the tamarind juice. You can store in the refrigerator for the future. You use only 3 Tbsp for this recipe.
7) Put all ingredients of Phad Thai sauce in the pan on medium heat.
8) Stir constantly until sugar is dissolved. Remove from the heat.
9) I grind the peanut from the pestle and mortar.
10) I normally use the extra firm tofu but here I use only one piece fried tofu.
11) Mince garlic and shallots, cut tofu into  1 " length.
12) Cut green onion into 1" length and wash bean sprout.
13)  When the noodle is soft. Drain and cut noodles into half. It makes easy to cook and eat.
14) Heat 3 Tbsp canola oil in a pan on medium heat.
15) When the oil is hot, add minced shallots and garlic. Stir fried until fragrant.
16) Add cut tofu and keep stir fried until lightly brown
16) Add shrimp and keep stir until shrimp is getting cook.
17) Add eggs. Spread eggs in a thin layer.
18) After the egg is cooked.
20) Add glass noodles.
21) Add Phad Thai sauce.
22) Stir well until noodle is soft and the sauce cover all the noodle. Then add ground peanut.
23) Add cut green onion.
24) Add bean sprout.
25) Mix all ingredients thoroughly and remove from the heat.
26) Spoon onto a serving plate. Usually serves with fresh vegetable such as mung bean sprouts, green onions, cilantro. Sometime you can see ground roasted peanuts, ground dried chillies and slice lime. Enjoy!

Fancy Noodle packages filled with Shrimp and mushroom

 Fancy noodle packages filled with shrimp and mushroom or Kuew Tiew Lui Suan Gung ; ก๋วยเตี๋ยวลุยสวนกุ้ง. This is a very healthy recipe that I would like to share with you. I really hope you enjoy my Thai recipe.

Ingredients:
1 ) 1 package of flat noodle.
2) 18 shrimp
3) 7 dried shrimp
4) 3 carrots
5) 3 cloves garlic
6) 1 Tbsp oyster sauce
7) 2 Tbsp thin soy sauce
8) 1/2 Tbsp sugar
9) 1 tsp ground white pepper
10) 1 Tbsp canola oil
11) Cilantro, green lettuce, Farang cilantro ( Phak Chee Farang ) and Thai basil

Ingredients for the sauce:
1) 4 cloves garlic
2) 12 hot Thai chilies
3) 2 sprigs cilantro
4) 1 sprig Thai basil
5) 2 Tbsp sugar
6) 5 Tbsp water
7) 3 Tbsp lime juice
8) 2 Tbsp fish sauce

Preparation:
1) Put the noodle in the microwave for 1-2 minutes or until soft.
2) Open the package and cut the place noodle in a 6" x 8 " size. Set a side for the wrapper.

3) Bring the dried mushroom to soak with water for 15-20 minutes or until soft. Peel carrots and garlic. peel shrimp.
4) Mince garlic, grind shrimp, cut carrots in a small dice. When the dried mushroom is soft, cut into small dice.
5) Heat oil in a same pan on medium heat, When the oil is hot, add minced garlic.
6) Keep stir fried until fragrant.
7) Add carrot, Stir fried until the carrot almost cook.
8) Add mushroom.
9) Add ground shrimp and keep stir well until shrimp is getting cook.
10) Add oyster sauce, ground pepper, thin soy sauce and sugar.
11) Stir fry until all ingredients mix well.
12) Wash all vegetables. There are Phak Chee Farang, cilantro, geen lettuce and Thai basil.
13) Spread the wrapper on a working space, spoon a stir fried ground shrimp 2 Tbsp on the wrapper.
14) Add some Phak Chee Farang, cilantro, Thai basil and green lettuce.
15) Then fold it up, see the photos.


For making the hot sauce :
1) Stir t2 Tbsp of sugar and 5 Tbsp of water until dissolved.
2)Peel garlic, pick off the stems from Hot Thai pepper, Thai basil.
3) Cut garlic, fresh pepper into small pieces, chop Thai basil and cilantro.
4) Bring to the food processor with sugar water.
5) Add lime juice.
6) Add fish sauce and mix all ingredients get together.

Bring the hot sauce to serve with fancy noodle packages filled with Shrimp. Enjoy.
