Vegetarian Egg Noodle with Tofu Curry Sauce


Vegetarian Egg Noodle with Tufo Curry Sauce or " Khao Soi Jay" in Thai. I made Khao soi with rice noodle last time. Here I made with egg noodle with tofu for my lunch. That made my lunch was so wonderful. If you don't like tofu you could make with ingredients you have in hand which make it tastes good too. Try to make it from your kitchen, maybe you may like Khao Soi.

Ingredients:
1) 1 package spiced thick dry tofu
2) 1 Tbsp curry powder
3) 1/4 cup slice ginger
4) 3/4 Tbsp palm sugar
5) 3 Tbsp thin soy sauce
6) 1 cup coconut milk
7) 1 1/2 Tbsp red curry
8) 1 cup water
9) 1 Tbsp lime juice
10) 2 shallots
11) 3 sprigs cilantro
12) 1 Tbsp canola oil
13) 1 package sour mustard
14) 4 coils egg noodle.

Preparation:
1) Wash tofu and cut 2 " length or the way you like.

2) Peel ginger skin and cut into small pieces.
3) Grind ginger in the mortar and pestle.
4) Add red curry into the mortar then crush until well blend.

5) Heat oi l in a wok on medium heat.
6) When the oil is hot add crushed red curry and ginger in the wok.
7) Stir until fragrant.

8) Add cut tofu into the wok. And stir well until all ingredients get mix together.
9) Add curry power to stir very well until all ingredients is mix together.

10) Add coconut milk into the wok. Let the mixture simmer for 1 minute then add water into the wok and seasoning with thin soy sauce, lime juice and sugar. Stir well then remove from the heat.
11) Wash cilantro and chop it for side dish.
12) Peel shallots and wash it, then thinly slice for side dish.
13) Bring water to boil the sour custard for 10 minutes. Drain, rinse in cold water, and thinly slice for the side dish.



14) Bring water to boil in high heat. Add egg noodle to boil for 15 minutes or until the egg noodle cooks.

Bring cooked egg noodle to soak with cold water for 5 minutes and drain.

15) When we serve, we put the cooked noodle first, and pour the curry sauce on top of the noodle and garnish with the side dished like chopped cilantro, sliced shallots and slice sour mustard. ( See photos) Enjoy!

Thai Fried Tilapia in Chili Sauce

Thai Fried Tilapia in Chili Sauce or "Pla Rad Prik" in Thai. This dish can be made with any kind of fish that you have in hand like catfish, grouper, sea bass or salmon. Usually, we like to make with whole fish. I don't have whole fish tonight, I made with boneless tilapia which made a great dinner also. The main chili sauce is made from tamarind concentrate. This was very tasty with salty, spicy, sour and sweet.

Ingredients:
1) 0.95 Lb. Boneless Tilapia
2) 3/4 cup oil

Ingredients for the sauce
1) 6 cloves garlic
2) 3 shallots
3) 14 fresh chilies
4) 2 Tbsp tamarind concentrate
5) 1 1/2 Tbsp palm sugar
6) 1/8 tsp salt
7) 1 Tbsp canola oil
8) 10 sprigs cilantro
9) 2 Tbsp fish sauce
10) 3/4 cup water

Preparation for the tilapia:

1) Clean tilapia and pat it to dry.
2) Heat 3/4 cup oil in a wok on medium heat.
3) When the oil is hot, fry tilapia on a wok.
4) Fry until the tilapia is golden brown on one side.
5) Then turn another side down to fry.
6) When it is crispy then remove from the oil to drain on paper tower. And fry rest of the fish.


Preparation for the sauce:
1) Peel shallots and garlic, pick the fresh chilies from the stems and wash them very well. Wash dirt from cilantro too.
2) Chop garlic and shallots.
3) Cut stem of cilantro into small pieces. Normally, I prefer to use root of cilantro but I don't have it today.
4) Use mortar and pestle to grind the fresh chilies and stems of cilantro with salt.

6) Heat 1 Tbsp canola oil in the pan on medium heat.
7) When the oil is hot, add chopped garlic.
8) Add chopped onion.
9) Stir-fried until fragrant.
10) Add ground fresh chilies.
11) Add water, tamarind concentrate, palm sugar, fish sauce.
12) Stir until all ingredients get mix and remove from heat. Bring to pour on top of fried tilapia and garnish with cilantro before serve. Enjoy !


Vegetarian Stir-Fried Egg Noodle

Vegetarian Stir-Fried Egg Noodle or " Phad Ba Mee Jay" in Thai. Today I made another simple and healthy dish, it is so easy to put together cooked egg noodle with red pepper, mushroom and snow pea with Sriracha Sauce, thin soy sauce and sweet chili sauce. This was mild dish but made a great dinner. It has been for a week that I don't have real kitchen. I had cooked a lot of Thai dishes and I would love to share but it's really inconvenient to take a photos while I cook on the single burner propane stove. But I try this time. It seems to be okay. It works just fine and I just take my time. It's also going to take longer than we though on redo kitchen. Any way I am excited about it. I am so glad that I could share this recipe with you. I hope you like it.

Ingredients:
1) 3 coils egg noodle
2) 1 red bell pepper
3) 2 Cups snow pea
4) 6 mushrooms
5) 1/2 Tbsp lime juice
6) 3 1/2 Tbsp thin soy sauce
7) 1/2 Sriracha chili Sauce
8) 2 Tbsp Sweet Chili Sauce
9) 1 tsp sugar
10) 1 onion
11) 3 cloves garlic
12) 2 Tbsp canola oil.

Preparation:
1) This is egg noodle. It come with one package but here I used 3 coils for the dish.
2) Bring the water to boil in high heat, then cook the egg noodle in boiling water for 10 minutes or until the noddles cook. Remove from the heat. Drain and rinse in cold water and set aside.


3) Wash the mushrooms and thinly slice.

4) Wash red pepper and cut into 2 " length.
5) Wash snow peas and cut the end of both sides.
6) Peel onion and garlic and wash very well. Thinly slice onion and chop garlic.
7) Heat canola oil in a pan on medium heat.
8) When the oil is hot, add chopped garlic.
9) And add sliced onion. Stir-fried until fragrant.
10) Add thin soy sauce, sweet chili sauce, Sriracha chili sauce, sugar and lime juice.
12) Add sliced mushrooms to stir in the pan for a minute.
13) Add cooked egg noodle in stir in a pan .
14) Stir well until all ingredients mix well.
15) Add snow peas to stir in the pan for one minute.

16) Add cut red bell pepper into the pan.
17) Stir well until all ingredients get together. Remove from the heat and enjoy!
