Steamed whole Tilapai with Soy Bean Paste

 Steamed whole Tilapai with Soy Bean Paste; ปลานิลนึ่งเต้าเจี้ยว. I wanted to buy whole fish to grill with lemongrass but they cut my fish in half. I steamed with soy beans paste instead of grill. It was good and delicious too.

Ingredients:
1) 2.39 Lbs whole tilapia
2) 2 small roots ginger
3) 2 Tbsp salted soy bean
4) 1 tsp thin soy sauce
5) 1 Tbsp sugar
6) 4-5 Tbsp water
7) 12 fresh chilies
8) 5 sprigs cilantro
9) 15 cloves garlic
10) 4 green onion

Preparation:
1) Scraped and clean the fish very well.

2)  I use salt to get rid of the smell from the fish.
3 ) Score the fish at an angle all the way to the bones on both sides to help it cook faster and the sauce get through the fish better.
 4) Heat water in a steamer until boiling. Then put the prepared fish in the steamer and leave it for 20-30 minutes or until the fish is cooked.

 5) On the mean time while we are steaming the fish. Peel garlic, ginger and pick up the stems of fresh chilies.
 6) Slice ginger and chilies. Chop garlic.
 7) Here is soy bean paste.
 8) Mix all ingredients; soy bean paste, thin soy sauce, sugar and water in a mixing bowl and stir well.
 9) When the fish is cooked. Dumping out the water in the dish carefully.

 10) Pour the mixing sauce all over the fishes.

 11) Place chopped garlic all over the fishes.
 12) Following the sliced ginger.
 13) And top on the plate with sliced fresh chilies.
 14) Steam for 3-5  minutes.
 15) Wash cilantro,  and green onions. Cut into 1 " length.

 16) Sprinkle on top of the fishes.
 17) Steam for one minute.
 18) Transfer the steamed fishes  to a serving dish. Enjoy!
