Glass Noodles Phad Thai Shrimp

Glass Noodles Phad Thai Shrimp or Phad Thai Wun Sen Gung; ผัดไทยวุ้นเส้นกุ้ง. I like to make Phad Thai with glass noodles also. I love the texture of it. Every ingredients are the same with my Phad Thai recipe but I use glass noodle. Enjoy my recipe.

Ingredients for Phad Thai Sauce
1) 3 Tbsp tamarind juice
2) 3 Tbsp fish sauce
3) 1 Tbsp palm sugar

Ingredients:
1) 2 coils glass noodle
2) 15 medium shrimp
3) 2 eggs
4) 1/2 cup ground roast peanut
5) 3 Tbsp canola oil
6) 2 shallots
7) 3 cloves garlic
8) 1 and 1/2 cups bean sprout
9) 4 green onion
10) 1/2 package of fried tofu.


Preparation:
1) Soak glass noodle for 15-20 minutes or until noodle is getting soft.
2) Here is the wet tamarind seedless.
3) I Soak 1/2 cup of water with warm water for 5-10 minutes or until soft.
4) Peel and clean shrimp.
5) Strain and discard fibers.
6) Here is the tamarind juice. You can store in the refrigerator for the future. You use only 3 Tbsp for this recipe.
7) Put all ingredients of Phad Thai sauce in the pan on medium heat.
8) Stir constantly until sugar is dissolved. Remove from the heat.
9) I grind the peanut from the pestle and mortar.
10) I normally use the extra firm tofu but here I use only one piece fried tofu.
11) Mince garlic and shallots, cut tofu into  1 " length.
12) Cut green onion into 1" length and wash bean sprout.
13)  When the noodle is soft. Drain and cut noodles into half. It makes easy to cook and eat.
14) Heat 3 Tbsp canola oil in a pan on medium heat.
15) When the oil is hot, add minced shallots and garlic. Stir fried until fragrant.
16) Add cut tofu and keep stir fried until lightly brown
16) Add shrimp and keep stir until shrimp is getting cook.
17) Add eggs. Spread eggs in a thin layer.
18) After the egg is cooked.
20) Add glass noodles.
21) Add Phad Thai sauce.
22) Stir well until noodle is soft and the sauce cover all the noodle. Then add ground peanut.
23) Add cut green onion.
24) Add bean sprout.
25) Mix all ingredients thoroughly and remove from the heat.
26) Spoon onto a serving plate. Usually serves with fresh vegetable such as mung bean sprouts, green onions, cilantro. Sometime you can see ground roasted peanuts, ground dried chillies and slice lime. Enjoy!
