Grilled fish balls with thickened sweet and sour sauce

Grilled fish balls with thickened sweet and sour sauce or Luck Chin Pla with Nam Jim; ลูกชิ้นปลาปิ้ง. I love to eat a skewer of grilled fish balls for my snack. I learn to make a Nam Jim for fish balls. There are so many recipe to make the sauce to have with the skewer of fish balls. I choose to make the one that I like the best. It is easy to make.

Ingredients :
1) Fish balls http://amporn-oleski.blogspot.com/2012/02/thai-fish-ball.html
2) 1 Lime ( 2 and 1/2 Tbsp )
3) 1 tsp salt
4) 2 Tbsp sugar
5) 1 cup of water
6) 15 Thai hot chili
7) 1 Tbsp tapioca flour + 2 Tbsp water


Preparation:
1) Pick off the stems from the hot chili peppers. Grind the chili peppers in a food processor or mortar and pestle. Preheat your oven to 450 degrees, and put the fish balls on a tray in the oven.
2)Dissolve sugar and salt into a pan of water, and add some lime juice.
3)Put the hot chili pepper paste into the water.
4)Mix tapioca flour and water together, and put them into the pan. Stir until thick.
5)Continue stirring until it's thick.
6)Fish balls should be toasted a light brown.
7)Soak the fish balls in the sauce.
8)Serve with some sliced cucumbers and enjoy!

Thai sweet red chili sauce

Thai sweet red chili sauce or Nam Jim ;น้ำจิ้ม. It can be served as a dip with spring rolls, grilled chicken, vegetables or shrimp. It's versatile all purpose sauce. You can see from any supermarket. I will show you how to make it. It's easy.

Ingredients:
1) 1/2 cup vinegar
2) 1/2 cup water
3) 9 cloves garlic
4) 12 fresh chilies
5) 1/4 cup of white sugar
6) 1 Tbsp fish sauce

Preparation:
1) Peel garlic, remove chilies stems, wash pat dry.
2) Cut into pieces.
3) Bring to the blender.
4) In a small pot, pour vinegar, sugar and water over medium heat. Bring to boil. Stir constantly until sugar dissolved and the sauce is thick.
5) Add ground garlic and fresh chili.
6) Reduce the heat to low and stir constantly about two minutes.
7) Remove from heat. Add fish sauce into the pot then taste it. You should taste sweet, sour, then spicy and salty.
8) Pour sauce into a small bowl and serve with my fish balls. Enjoy !

Baked Tilapia with hot tamarind sauce

Baked Tilapia with hot tamarind sauce or Op Pla Rad Prik ( อบปลาราดพริก ) in Thai. This is my second entries of Pla Rad Prik. This recipe I cook fish in a difference way. I ran out cooking oil, I try to bake tilapia with 400 degree for 45 minutes. It made a simple dinner and we enjoyed our dinner very much. I hope you enjoy my recipe too.

Ingredients :
1) 2 Lbs. Tilapia
2) 1 Tbsp tamarind sauce
3) 1 Tbsp palm sugar
4) 1 Tbsp fish sauce
5) 2 cloves garlic
6) 5 shallots
7) 5 sprigs cilantro
8) 7 Thai chilies
9) 2 Tbsp canola oil
10) 1/2 Cup of water

Preparation:
1) Wash the fish and pat to dry. Turn on the oven into 400 F

2) when the oven is ready, sprinkle salt both side of tilapia then bring to bake with 4000F for 40-45 minutes.
3) Soak 1/3 cup of water with warm water for 5-10 minutes or until soft.
4) Squeeze the seeds and fiber with your fingers then strain and discard fibers.
5) Wash dirt from cilantro, peel garlic and shallots. Don't forget to remove chilies stems too.
6) Cut all vegetables into small pieces.
7) Use a mortar and pestle to crush the chillies, garlic, cilantro and shallots together.

8) Put canola oil into pan with medium heat.
9) When oil is hot add crushed garlic, shallots, cilantro and chilies.
10) Stir fried until fragrant.
11) Add tamarind juice, fish sauce, sugar and water.
12) Stir well until all ingredients mix together. The taste of sauce should be sweet, spicy and sour.
13) Check the fish in the oven.
14) When the tilapia is cook, place into the serving plate.
15) Pour the sauce on top of the fish and garnish with coriander leaves.

Thai rice noodle nests with mushrooms sauce

Thai rice noodles nest with mushrooms sauce or "Kanom Jeen Nam Yaah Ka Tee Hed:ขนมจีนน้ำยากะทิเห็ด" in Thai. I love to eat Kanom Jeen Nam Yaah so much. Normally, I made the sauce from the fish. This recipe I learn to make the sauce from mushrooms and the very special of this time. I made it from the scratch. It takes me for 5 hours to finish the dish. I am happy with the result and my husband loves it so much. This is very healthy dish and lot of Thai herbs in the paste. I would like to thank you, Khun Pakavadee Siriprasert for your inspiration recipe. It made me want to try to make it. Some step that I remember from my mother made it too. I like it very much. I can't wait to make it again.

Ingredients:
1) 3/4 Lb. mushrooms
2) 6 stalks lemon grass
3) 10 roots of krachai
4) 3 roots of cumin
5) 2 galangal
6) 16 shallots
7) 15 cloves garlic
8) 8 kaffir lime leaves.
9) 24 dried pepper
10) 3 tsp shrimp paste
11) 8 Tbsp fish sauce
12) 1/2 Tbsp sugar
13) 1 and 1/2 cups coconut milk
14) 5 cup of water
15) bean sprout, pickled mustard, thinly slice green bean and cucumber
16) 5 rolls noodles.
17) 1 Tbsp canola oil

Preparation:
1) This is dried chili pepper.


2) Take the seeds out then bring to soak with water for 10-20 minutes or until soft.
4) Wash mushrooms then pat to dry.
5) Peel and wash all herbs.
6) Cut all herbs into small pieces.
7) In a big pot, pour 10 cups of water, bring to boil with all the herbs on medium heat.
8) When the water is bolling, bring soaked dried chili pepper into the pot.

9) Cut the mushrooms into small pieces.
10) Add into the pot. Let it boils for another 10 minutes or until all ingredients is done.
11) Add shrimp paste.
12) Stir a little bit and make sure shrimp paste dissolved.
13) Here I used Japanese Somen noodle.

14) Pour 4 cups water in a pot, bring to boil on high heat, add the noodles, and stir thoroughly. Boil for 5 minutes.

15) Pour out hot water and rinse in cold water. Grab a handful of cooked noodles, roll the noodles around your hand, and place it on a plate.


Preparation side ingredients:


16) Pickled mustard, pour 3 cups of water in a pot, bring to boil on high heat, then add pickled mustard, and let it boil about 10 minutes. Drain, rinse in cold water, squeeze water out, and place them on a plate.

17) Slice all vegetables into small pieces. Set aside.

18) Blend cooked mushrooms and the herbs in the food processor.



19) Add canola oil into a pot on a medium heat.
20) When the oil is hot, add the Kanom Jeen Nam Yaah paste to stir fried until fragrant.

21) Add coconut milk.
22) Stir regularly to prevent sticking at a bottom.
23) Add 5 cups of the water.
24) Seasoning with fish sauce and sugar then remove from heat.
25) Here is the Kanom Jeen Nam Yaah that I made from the mushrooms. Look good.

26) Arrange the cooked noodle nests and all side ingredients such as sliced long green beans, and sliced pickled mustard, bean sprout and cucumber on a serving plate. 27 ) Serve hot with mushroom sauce.
