Linguini Kee Mao Gung

 Linguini Kee Mao Gung or stir-fried spicy linguni with shrimp ; ผัดขี้เมากุ้ง 

Ingredients:

1) 7 shrimp 
2) 1 cup of Thai basil
3) 1/4 Lb linguini
4) 4 fresh Thai chili
5) 4 cloves garlic
6) 1 tomato
7) 1 Tbsp vegetarian mushroom oyster sauce
8) 1/2 Tbsp sugar.
9) 1 Tbsp seasoning soy sauce
10) 2 Tbsp canola oil
11) 1/2 Tbsp Chilli Paste in soybeans oil or Namprik Pao


Preparation:
1)  Bring 8 cups of water to boil. Add 1/4 Lb. of pasta to boiling water. 

2) Cook 9 to 11 minutes or until desired tenderness.
3) Wash Thai basil, tomato, Peel garlic. Pick up the hot Thai chili from stems.
 4) Use a mortar and pestle to crush the chillies and garlic.

5) Cut tomato into 8 pieces and Pick up the Thai basil from stems.
 6) Peel shrimp.
 7) When the pasta is cooked, rinse with cold water and drained

 8) Put canola oil into pan with medium heat.
 9) When oil is hot put crushed garlic and chillies into the pan.
 10) Add Chilli Paste in soybeans oil or Namprik Pao. Then stir well for a minute.
 11) Add shrimp and  seasoning  soy sauce, vegetarian mushroom oyster sauce and sugar. Stir well until shrimps are cooked 

 12) Add cooked  Linguini. Stir very well until linguini  get into the sauce.
 13) Add cut tomato.

 14) Add Thai basil.
15) And stir well until all ingredients get together then remove from the heat.

Stir Fried Salmon with Chilli Paste in soybeans oil

 Stir Fried Salmon with Chilli Paste in soybeans oil or Phad Pla Salmon Namprik Pao ; ผัดปลาซามอนน้ำพริกเผา

Ingredients:
1) 1/2 Lb salmon
2) 5 cloves garlic
3) 6 fresh chillies
4) 1 tsp sugar
5) 2 Tbsp thin  soy sauce
6) 2 Tbsp canola oil
7) 2 Tbsp oyster sauce
8) 1/4 cup of water
9) 5 green onions
10) 1 head white onion
11) 2 Tbsp Chilli Paste in soybeans oil or Namprik Pao

Preparation:
1) It is frozen salmon. Place the 1/2 package under cold water for 10-15 minutes until thawed.
 2) Cut salmon into 1" length.
 3) Peel garlic and remove the stems, wash garlic and fresh chillies then mince garlic and slice chillies.
 4) Peel onion and thinly slice.
 5) Wash green onion and cut into 1" length.
 6) There are all ingredients for this recipe.
 7) Heat oil in a pan on medium heat, When oil Heat oil is hot add minced garlic.

 8) Stir fry until fragrant then add chilli Paste in soybeans oil or namprik pao.
 9) Add sliced onion.
 10) Fry until fragrant then add sugar, thin soy sauce, oyster sauce and water.
 11) Add cut salmon and try not to stir the salmon in the pan until the salmon is cooked.
 12) I cover my pan while cooking salmon for a minute.
 13) Once the salmon is getting cook, stir fry quick.
 14) Add cut green onion and chillies.

15) Stir well until the vegetables are soft and remove from the heat.
16) Place a stir fried salmon with Chilli paste in soybeans oil on a plate and serve immediately.

Stir-fried squid with basil on rice and fried egg

 Stir-fried squid with basil on rice and fried egg : ข้าวกระเพรปลาหมึกไข่ดาว 

Ingredients:
1) 1 Lb squid
2) 1 cup Thai basil
3) 6 cloves garlic
4) 6 fresh chillies
5) 1/2 Tbsp sugar
6) 1 Tbsp thin  soy sauce
7) 2 Tbsp canola oil
8) 1 Tbsp oyster sauce
9) 2 cups cooked rice
10) 2 eggs

Preparation:
1) It is frozen squid. It is fully cleaned trimmed and ready to be cooked. You can thaw overnight in bag in the refrigerator, or place the package under cold water for 10-15 minutes until thawed.
 2) Peel garlic, remove chillies stems and wash garlic, chillies, and sweet basil, then pat dry.
 3) In a mortar, coarsely pound garlic and hot chillies pepper.


 4) Then  pick only sweet basil leaves from stems.
 5) Make deep fried eggs first and then remove from oil, and drain on paper towel.

 6) Place a cooked rice on a serving plate.
 7) Heat the canola oil in a pan over medium heat. Add  garlic and chillies to stir in the pan. Stir evenly until fragrant then add cut squid to stir well until cooked through.
 8) Seasoning with oyster sauce, sugar and thin soy sauce. Stir fry constantly.
 9) Add basil and stir quickly to heat  basil so they retain their colour, then remove from heat

 10) Serve with fried egg and cooked Jasmine rice.
