Stir-fried squid with basil on rice and fried egg

 Stir-fried squid with basil on rice and fried egg : ข้าวกระเพรปลาหมึกไข่ดาว 

Ingredients:
1) 1 Lb squid
2) 1 cup Thai basil
3) 6 cloves garlic
4) 6 fresh chillies
5) 1/2 Tbsp sugar
6) 1 Tbsp thin  soy sauce
7) 2 Tbsp canola oil
8) 1 Tbsp oyster sauce
9) 2 cups cooked rice
10) 2 eggs

Preparation:
1) It is frozen squid. It is fully cleaned trimmed and ready to be cooked. You can thaw overnight in bag in the refrigerator, or place the package under cold water for 10-15 minutes until thawed.
 2) Peel garlic, remove chillies stems and wash garlic, chillies, and sweet basil, then pat dry.
 3) In a mortar, coarsely pound garlic and hot chillies pepper.


 4) Then  pick only sweet basil leaves from stems.
 5) Make deep fried eggs first and then remove from oil, and drain on paper towel.

 6) Place a cooked rice on a serving plate.
 7) Heat the canola oil in a pan over medium heat. Add  garlic and chillies to stir in the pan. Stir evenly until fragrant then add cut squid to stir well until cooked through.
 8) Seasoning with oyster sauce, sugar and thin soy sauce. Stir fry constantly.
 9) Add basil and stir quickly to heat  basil so they retain their colour, then remove from heat

 10) Serve with fried egg and cooked Jasmine rice.

Won ton Noodle Soup

 Won ton Noodle Soup ( Kiao Nam ) เกี้ยวน้ำกุ้ง

Ingredients for won ton filling :
1) 20 shrimp
2) 4 cloves garlic
3) 1 cilantro root
4) 1 Tbsp oyster sauce
5) 1 Tbsp thin soy sauce
6) 1/8 tsp ground white pepper
7) 1 package won ton wrapper
8) 1/3 cup of water for glue 
Ingredients for the broth:
1) 3 cups of water 
2) 1/8 tsp salt
3) 1 Tbsp oyster sauce
4) 1 tsp sugar
5) 2 Tbsp thin soy sauce
6) 1/8 tsp ground white pepper
Other ingredients :
1) 1 roll egg noodle
2)  7 stalks choi sum
3) 1 Tbsp fried garlic
4) 3 green onions
5) 2 sprigs cilantro
6) 1/8 tsp ground white pepper for garnish

Preparation:
1) Clean shrimp, peel shell, and devein.
 2) Grind shrimp then put on a bowl.
 3) Peel garlic and wash cilantro root very well.
 4) Mince garlic and cilantro root.
 5) In a mixing bowl, add ground shrimp, minced cilantro and garlic, oyster sauce, ground white pepper and thin soy sauce.
 6) Mix all ingredients together.
 7) Won ton wrappers.
 8) Place a quarter-size spoonful of filling in the center of the wrappers.
 10) Put water on all edges.
 11) To form a triangle by folding the bottom tip to the top tip and pinch out as much air as possible. This is the easy way to wrap. Place the finished won ton on a plate. Keep won tons covered with a damp towel to prevent the wrappers from drying out. Repeat folding until filling or wrappers are used up.

 12)  Wash green onion and cilantro then cut into small pieces.

 14) There are three pots, one for the broth, the another pot for cooking the egg noodle and the last one for cooking the won tons.
 15)  Add water and bring to a boil. Add won tons and simmer uncovered, stirring gently, for about 4 to 7 minutes until done.  Here is the trick. When dumplings float to the top, that usually means they’re done.
 16) Wash the choi sum and cut into 2 " length.

 17) Fried garlic.
 18) Cook the noodles in the pot according to the package instructions. It takes about 1-3 minutes.

 19) First I cook choi sum for about minutes then put on the bowl, the cook eggs noodle then place to a bowl.


 20) Add cooked won tons and fried garlic in each bowl. 
 21) Add a broth in a bowl and garnish with cut green onion and cilantro. Top with fried garlic and sprinkle with ground pepper.
