Stir-fried squid with basil on rice and fried egg : ข้าวกระเพราปลาหมึกไข่ดาว
1) 1 Lb squid
2) 1 cup Thai basil
3) 6 cloves garlic
4) 6 fresh chillies
5) 1/2 Tbsp sugar
6) 1 Tbsp thin soy sauce
7) 2 Tbsp canola oil
8) 1 Tbsp oyster sauce
9) 2 cups cooked rice
10) 2 eggs
1) It is frozen squid. It is fully cleaned trimmed and ready to be cooked. You can thaw overnight in bag in the refrigerator, or place the package under cold water for 10-15 minutes until thawed.
remove chillies stems and wash garlic, chillies, and sweet basil, then pat dry.
In a mortar, coarsely pound garlic and hot chillies pepper.
pick only sweet basil leaves from stems.
then remove from oil, and drain on paper towel.
Heat the canola oil in a pan over medium heat. Add garlic and chillies to stir in the pan. Stir evenly until fragrant then add cut squid to stir well until cooked through.
Seasoning with oyster sauce, sugar and thin soy sauce. Stir fry constantly.
Add basil and stir quickly to heat basil so they retain their colour, then remove from heat
erve with fried egg and cooked Jasmine rice.
