Boiled four vegetables with gravy

 Boiled four vegetables with gravy; Phad Si Sa Hai ผัดสี่สหาย.

1) 10 dried Shiitake mushroom
2) 3 carrots
3) 1/2  packet fresh small baby corns
4) 20 spears of asparagus
5) 1/2 Tbsp canola oil
6) 1/2 Tbsp salt
7) 10 cups of water

Ingredients for the gravy sauce:
1) 1/3 cup water
2) 1/2 Tbsp canola oil
3) 2 Tbsp sesame oil
4) 3 Tbsp oyster sauce
5) 3 Tbsp thin soy sauce
6)  1 Tbsp tapioca flour add 3 Tbsp water.

1) Soak the dry shiitake mushrooms in 2 cups warm water. When soft, squeeze the water and remove the stems of the mushroom.
2)  Bring water to boil. Peel the carrot and cut into 3 " length.
3)  Peel the white bottoms then rinsing them thoroughly, break off any tough then cut into half.

4) Wash baby corn and set a aside.

5) Add salt and canola oil to the boiling water.
6) Boil baby corn, carrot, shiitake and asparagus for about 3-4 minutes.
7) Mix sesame oil, oyster sauce, and soy sauce.
8) Mix tapioca with 3 Tbsp of water.
9) Remove the cooked vegetables from the boiling water.

10) Then arrange them on a plate.
11) In a pan, heat the pan over medium to high heat, add canola oil.
12) Add mixture of sesame oil, oyster sauce, and soy sauce.
13) Add water.
14) Add tapioca mixture.
15) Stir well until it thickens. Then remove from the heat.
16) Pour the sauce over the top of the cooked vegetables on a plate.
17) Enjoy !
