Shrimp Red Curry with bamboo shoots



Shrimp Red Curry with bamboo shoots or "Khang Phed Gung Sai Nor Mai" in Thai. This is authentic spicy coconut milk with red curry paste that come from dried chili, shallots, garlic, lemongrass, galangal , and kaffir lime leaves. This is quick and yummy Thai dish and very easy to find ingredients. Today is cold and snow last night. We are still warming up after shovelling this afternoon. so quick and delicious recipe should be this dish for tonight.

Ingredients:
1) 15 Shrimps
2) 1/2 cup shredded bamboo shoots (can bamboo shoots)
3) 1 tsp palm sugar
4) 2 Tbsp lite soy sauce or fish sauce
5) 1 cup Thai Basil
6) 2 fresh chillies
7) 2 kaffir lime leaves
8) 1 cup coconut milk
9) 2 Tbsp red curry paste


Preparation:
1) wash and peel shrimps


2) Clean shredded bamboo shoots very well then bring to boil on high heat for 15 minutes set aside


3) pick only sweet basil leaves from stem


4) slice chillies and kaffir lime leaves


5) pour coconut into pot on medium heat until boil.


6)put red curry into the pot

Stir until thoroughly mixed and let it boil until some oil appear on surface, stir constantly.


7) add shredded bamboo shoots,


8) add palm sugar, lite soy sauce and stir thoroughly




9) add shrimp into pot


stir until shrimp cooked



10) add Thai basil


11) after a few seconds add kaffir lime leaves and chillies into the pot and remove from the heat and ready to be served.. Enjoy!

Stir- Fried Shrimp in Prik Khing Curry Paste



Stir-Fried Shrimp in Prik Khing Curry Paste or " Phad Prik Khing Gung " in Thai. This is what real Thai stir-fry should be like. It is dry. This is one of dish full of flavour and spices and nice textures. Phad Prik Khing Paste is from chili, galangal, cilantro, lemongrass, shallots and garlic. I like to cook this dish when I am in hurry because quick and yummy. My husband and I like it too. Enjoy!

Ingredients:
1) 20 medium shrimps
2) 1 cup green bean
3) 3 Tbsp Prik Khing curry paste
4) 2 Tbsp canola oil
5) 1 tsp lite soy sauce or fish sauce
6) 1 tsp sugar
7) 3 kaffir lime leaves

Preparation:

1)Clean shrimps and peel shell


2)Cut 1.5 " lenght green beans


3) Slice kaffir lime leaves


4) Put oil into pan with medium and wait pan get hot then add phad prik khing curry


Stir well


5) Add sliced thinly kaffir lime leaves into pan and stir a minute


6) Add green bean into the pan


7) Stir well another 1 minute


8) Add shrimps into pot


9) Stir untill shrimps is cooked and enjoy!

Baked Tilapia with Tamarind Sauce



Baked Tilapia with tamarind sauce or " Pla Op Num Ma Kham " in Thai. This is easy to bake with tamarind sauce, which is a fruit that grows in many parts of Asia. Make it easy on yourself and buy the prepared tamarind paste at a Chinese, Asian, or Indian food store. I like the most about This dish is that it tends to try to balance sweet, sour, spicy and salty with all ingredients and the results just delicious. The sauce is a combination of sweet and sour, with tones of chili, garlic and ginger.Here is only one dish that I can use tamarind sauce with my food. I look forward to using again.

Ingredients:
1) 1/2 Lb. tilapia
2) 1 green onion

Ingredients for Sauce:
1) 2 Tbsp Tamarind sauce
2) 1 tsp palm sugar
3) 3 Tbsp water
4) 2 Tbsp Chilli Paste in Soy bean Oil
5) 1/8 shrimp paste
6) 2 Tbsp ginger
7) 2 Tbsp garlic
3) 2 Tbsp lite soy sauce or fish sauce

Ingredients for seasoning mix
1) 3 fresh chillies
2) 1/8 tsp salt
3) 1 Tbsp lite soy sauce or fish sauce
4) 2 roots of cilantro

Preparation:
1) Wash fish and prepare to marinate


2) remove chillies stems then use a mortar and pestle to crush the chillies and cilantro roots with salt.




put 1 Tbsp fish sauce into the morta


then bring to marinate fish for 20 minuts.


3) chop ginger


4) grind garlic with garlic press


5) put tamarind sauce into pan with low to meduim heat


6) add ginger, garlic, water, palm sugar, fish sauce, chilli Paste and shrimp Paste into pan


7) mix all ingredients very well and turn on heat to low


8) bring fish into baking pan


put sauce on top of fish


bring to bake with 350F for 15 minuts.


9) check fish is cooked

10) cut green onion into small pieces and garnish the fish. Enjoy!

Stir-Fried Shrimp with Thai Basil



Stir-Fried Shrimp with Thai Basil or " Phad Kra Prow Gung " This is popular stir-fried recipe from easy to find ingredients. It 's Delicious but very easy to cook. It's spicy and yummy. Here I put some carrots in the dish. You can use bell pepper, grean beans or sometime I stir fried with bamboo shot. I will cook next time. We cook this dish for our dinner tonight and thank you my husband for being cleaning seafood section as usual.

Ingredients:
1) 16 Medium Shrimps
2) 1 cup Thai basil
3) 2 cloves garlic
4) 3 fresh chillies
5) 1 Tsp sugar
6) 2 Tbsp lite soy sauce or fish sauce
7) 1 tsp lime juice
8) 2 Tbsp canola oil
9) 1 cup carrot
10) 3 shallots
11) 1 " ginger


Preparation:
1) Clean shirmps, peel shell.


And pick only sweet basil leaves from stems.

2) Remove chillies stems and peel garlic then use a mortar and pestle to crush the chillies and garlic for the best result.




3) Thinly slice shallots .


4) Peel the skin out from giner and wash dirt well then slice fresh ginger.


5) Peel the carrots and cut carrots into 2 " length.


6) Heat the canola oil in a pan over medium heat.


7) Add crushed garlic and chillies to stir in the pan.


Wait a secound add shallots, ginger and all ingredients (sugar, lite soy sauce and lime juice ) stir until crisp & golden .


8) Next put carrots into the pan to stir-fried until almost cook.


9) Put shrimps into the pan until cook. Make sure do not over cook seafood.


10) Add Thai basil leaves.


11) Stir quickly to heat sweet basil so they retain their colour, then remove from heat. Enjoy!
