Boiled pandanus rice balls ; Khanom Tom Bai Toei ขนมต้มใบเตย
Ingredients:
For the filling :
1) 1 bag frozen scraped coconut
2) 1/3 cup palm sugar
3) 1/8 tsp salt
For coating :
1) Steamed 1 bag of frozen grated coconut
2) 1/8 tsp salt
For the dough :
1) 1 cup glutinous rice flour
2) 2 pandanus leaves, 1/3 cup of pandanus juice
3) 1 Tbsp tapioca rough starch
For the filling :

2) 2 pandanus leaves, 1/3 cup of pandanus juice
3) 1 Tbsp tapioca rough starch
For boiling :
1) 8 cups water
2) 2 pandanus leaves
Preparation:
1) Mix grated coconut and salt together, bring to steam over boiling water until hot and set aside.
2) To make the filling. Mix scraped coconut, salt and sugar in a pan.
3) In a medium heat, stir constantly until dry. You can roll into balls for the filling.
4) Remove from the heat.
5) Allow to cool slightly, roll into balls about 1-1.5 cm in diameter.
6) Place steamed coconut into the big plate for toss with the balls.
7) Wash pandanus leaves and cut into 1 " length, then put in the blender with 2/3cup of water.
8) Blend well and sift pandanus leaves extract. You will get 2/3 cups of green juice.
9) In a mixing bowl, add 1 cup of glutinous flour and 1 Tbsp tapioca rough starch.
10) This is tapioca rough starch. You need to use your finger press it down. We want to make it is a fine tapioca starch that can be mixed with glutinous flour.
11) Add pandanus juice into a mixing bowl. And add, a little at a time then knead until soft and uniform.
12) Divide the dough and roll into small balls about 1 " length in diameter.

14) Fill with the coconut filling.
15) Wrap the dough to cover the filling completely.

17) Repeat the step 13 to step 15 until you finished the dough.
18) You can bring the water to boil on high heat. When you finish to wrap the dough you can bring the pandanus balls to boil in a pot
19) Boil the pandanus balls in boiling water over medium-low heat.
20) When they float to the surface.
21) Remove with a slotted spoon, and toss in the steamed grated coconut.
22) Keep the food cold little bit before arrange on a plate and serve. Enjoy :-)
